Here is the vegan food diary I kept during 'Skinny Bitch' diet week, in case it helps anyone who is interested in trying vegan food but has no idea where to start.

I think vegan is one of the diets that improves as the size of your family grows and you can have small amounts of a bigger variety of foods in each meal.

This is more of an expensive week than usual: we don't normally eat so many vegan pretend meat products, but wanted to try them out for this vegan diet week.

 

Day 1

Breakfast:
Tea, Coffee, and 2 pieces toast with vegan margarine (Earth Balance Original Natural Buttery Spread), one with Marmite yeast extract (contains B vitamins including B12, which can be tricky for vegans to get enough of), and one with marmalade (well I am a Limey Brit)

11: Snack:
1 rice cake with sriracha sauce on (I know, weird, but it's like crack once you get into it! Watch out if you're being vegan for animal cruelty reasons: the slightly nicer version of sriracha has anchovies in and so isn't vegan)

Lunch:
Green salad with sunflower seeds and pumpkin seeds. Crispbread with Mediterranean Eggplant & Red Pepper spread (found that little treasure in Big Lots 🙂 ).

Afternoon snack after fetching older kids:
'Monkey shakes': vegan chocolate shakes made with coconut milk and banana

Dinner:
'Not Your Mother's Fettuccine Alfredo' (very nice recipe from The Vegan Menu). The sauce is made with pureed cauliflower, coconut milk, cashew nuts, lemon juice and nutritional yeast, among other things.

Day 2

Breakfast:
Tea, Coffee, apple and banana

9:30 Snack in the supermarket:
Starbucks soy latte ('tall' size, which is the smallest), another banana

Out for lunch with friends at a pizza restaurant:
Green salad with olives and mushrooms, also shared some bruschetta with my toddler (no cheese on this)

Dinner:
Tacos with pinto beans, rice, tomatoes, onions, garlic and Tofurky Soy Chorizo. Interesting stuff - not bad. Organic red wine (allowed on the 'Skinny Bitch' diet, but in this case, not very nice).

Day 3

Breakfast:
Tea, Coffee, and All Bran, mini Shredded Wheats, banana slices and coconut milk

Lunch (Family hike with a picnic):
Peanut butter and jelly sandwiches (yes, those are vegan!), marmite sandwiches, Nature's Valley granola bars (crunchy dark chocolate and oats), mini carrots, hummus, pita chips and water

Organic Red Wine: I've had better

Dinner: Fake Vegan 'Barbecue':
Vegetarian baked beans with barbecue sauce, rice, tofu hot dogs, sauerkraut, BBQ 'Pulled' Seitan ("Pulled Satan?", my kids said. It's a Japanese type of protein pretending to be American style pulled pork. Not bad, but not much like pulled pork either).
Vegan almond milk chocolate puddings, and the rest of the organic red wine.

Day 4

Breakfast:
Tea, Coffee, and 2 pieces of toast with marmite and marmalade again

Lunch:
Pasta with veggies and tomato sauce with Italian seasoning.
Cherries

Dinner:
Asian stir fry veggies (literally, a packet of Asian stir fry vegetables from the frozen vegetables section in the supermarket) with tofu, sauce and rice noodles.
Vegan Key Lime Pie, from a recipe from The Vegan Menu (very nice!), and blueberries.

Day 5

Breakfast:
Tea, Coffee, and Toast

11am Snack:
Granola bar

Lunch:
Green salad with sunflower seeds, pumpkin seeds and sesame seeds, hummus and mini carrots.
Cherries.

Dinner:
Leftovers

Day 6

Breakfast:
Tea, Coffee, and 'Nutty Nuggets' (like Grape nuts) with almond milk

Snack:
Rice cake with sriracha sauce

Lunch:
Vegetable soup, bread

Dinner:
Vegan pizza (no cheese, meat or fish!). Here's an example.

Day 7

Breakfast:
Tea, Coffee and Toast

Mother in law arrives to stay!

Lunch:
Vegan pizza and salad

Dinner:
Southwestern corn pudding stuffed pasilla chilli peppers with black beans and tomato sauce (adapted to be less spicy, from The Vegan Menu), with rice
Vegan Chocolate Mocha Pie (recipe from Whole Foods Market)
